Orange Lemon Sorbet
My mind is frantic. I got news that I might go back to Oak Rige for experiments. I have other plans. Why oh why?! I am excited but I am worried. When will I leave this town?
To get my mind off, I got in touch with a good friend and exchanged a few recipes. Here's what I am trying tonight.
Orange Lemon Sorbet.
2 squeezed organic oranges
1 squeezed lemon and the zest.
3/4 cup sugar
1 cup water
1 teaspoon agar agar
1/4 cup Southern Comfort, SoCo, or vodka
Mix the water and sugar and bring to a boil. Add the lemon and orange juices and heat until boiling. Turn the heat off and add the zest, SoCo, and agar agar. Strain and let cool to room temperature then add to a bowl and cool in the freezer while whisking with a fork every 30 minutes until frozen .
Let's see what will happen... I will update once I test and taste.

Update 1
After waiting and waiting, turns out that the first ice starts forming after an hour and some. So, did some search on the net and found a site that mentions to whisk the mix after an hour and a half then every hour over four hours to create the fluffy and smooth sorbet texture... (that's if you don't have an ice cream maker...) now i'm too sleepy to stay up and do this... *sigh*
More to come.
Update 2
so waited for 3.5 hours and stirred the mix 4 times. will leave it overnight or whatever is left of the night and check on it in the morning maybe mix/whisk one more time and place back in the freezer. tasted good a bit sour a bit tangy a bit sweet and a bit creamy/oily. let's see how it's going to be when it's frozen.

Whisked it one more time, today morning, and let it freeze for a couple of hours. I think this last was unnecessary but oh well we all learn with experience!
