I had some soymilk and lasagna so...
I chopped a small onion very finely and crushed some garlic. Sautéed the onion in olive oil until translucent and added the garlic. Sautéed a little more until the garlic started turning white. Added 2 cups of soymilk, thyme, basil, salt and black pepper, all to taste. Brought the mix to a boil and started adding 2 tablespoons of flour gradually with constant stirring. In the mean time I boiled the lasagna. Microwaved and drained a mix of carrots and peas and started layering the lasagna, veggies, and the sauce. Finished the layering with some lasagna and topped it with a little bit of sauce not to dry the pasta. Placed the dish in the oven for 30 minutes at 350.

VIs
so... hmmm seems like my coder included one small loop in my life's animation where i am stuck, viciously. maybe it will stop after a few rounds?
it's funny i visualize myself as a LabVIEW piece of $hit with the little diagram window and the funny boxes but hey this one's advanced: the diagram is a hologram.
i think there is a small box that counts/evaluates the output of every cycle and compares it to some ideal... such a waste.
every time i go through the cycle i fall deeper hit the rocks harder then get up climb to the top and victoriously cover the path with my heart's pieces. I wonder.. how far am i?
pieces multiplying and growing. i will cover the whole time space continuum with my thing and even let black holes suck on it: all that light trapped doesn't seem to let you see your true nature...
there's always more love for you to stuff in your megalomanic emptiness.

morning, i woke up and read the following text message "if there is anything worse than chlamydia, it's florida"
what a greeting what a way to start a day and that in florida! i lost all energy to come out of bed.
then i went to work, put my hand on the door knob and for a second realized i have been doing the same thing every morning for the past 6 years and like sinking lead i felt my whole being falling to the ground. but i picked myself up and stepped in, greeted my fellow chemists and moved to my desk. i started staring at the monitor decided to make coffee and have breakfast since i did not have time to eat it at home. i had made some oats flax seeds and soymilk which had turned into a weird mix upon cooling.
it took me three hours to finish it; a breakfast not broken so fast.
anyway, then after lunch, brunch, breakfast, we gathered and said goodbye to a colleague leaving the lab after a whole lot of years....
goodbyes.
goodbyes are irreversible.
i am still at work. reducing data. writing blogs. listening to music. crying. occasionaly realizing the fall and picking myself up up and up to fall again.
and fall and fall. each time the well growing deeper and more mysterious.

Amazing Salad
lettuce (5-7 green leaves)
1 can rinsed and drained black beans
1 can rinsed and drained corn
1 red bell pepper, diced
1 diced mango, diced
1/3 cup chopped red onion
1/3 cup chopped cilantro
2 squeezed limes
3 cloves garlic, mashed
1 teaspoon cumin
1 teaspoon chili powder
2 tablespoon olive oil
mashed the garlic then fried with 1 tbsp oil then added the beans and cooked for a few minutes and let the mix cool down then added the cumin and chili powder. in the mean time chopped the lettuce and prepared the other vegetables and mango.
placed the lettuce in a plate added the second tablespoon oil and lime juice then mixed till everything was covered with the sauce. next mixed the beans, onions, and corn and layered over the lettuce. topped with the bell pepper and mango and sprinkled the cilantro.
Bon appétit!

Vegan Rosemary Cookies
Here is what I created today!
1/2 cup soy milk
2/3 cup raw cane sugar
1 teaspoon of vanilla
2 tablespoons chopped fresh rosemary
3 cups unbleached flour
1/2 teaspoon coarse sea salt
1 tablespoon baking powder
1/4 teaspoon gum arabic
1- mix the oil and soy milk at high speed til well blended and creamy. add the sugar and vanilla and mix again.
2- powder, in a plate, the salt and gum arabic together with a spoon.
3- mix the flour salt gum arabic and baking powder then add the rosemary.4- mix the flour mix and the liquids using a spoon.
the mix will make twelve 3-inch cookies. bake six at a time in a cookie pan in an oven preheated at 350 oF for about 8 minutes or untill the sides start turning golden/brown. cool them on a rack.
Enjoy with a cuppa peppermint tea.

Aha! A new mystery.
Funny how everything happens in some time and place. All one has to do is be alert to capture the moment.
I had always wondered about the origin of the word potluck and no it's not pot + luck... and voila A.W.A.D sends me the answer and here I am sharing it with you.
Potlatch
PRONUNCIATION: (POT-lach)
MEANING: noun:
1. A party or get-together.
2. A ceremonial festival among American Indians of the Pacific Northwest involving feasts, lavish gift giving, dances, etc.
ETYMOLOGY: From Chinook Jargon, from Nootka patshatl (to give, gift).
Ah yes... the point of this post was not the word though... I baked some bread and it turned out to be a beautiful loaf.
2 tablespoon cane sugar
2/3 to 1 cup warm water
Mix and let ferment for about 30-45 minutes or until bubbles fill the mix.
Step2:
Add to the mix from Step 1
2 cups King Arthur’s white whole wheat flour
1/3 cup olive oil
2 tablespoons rice vinegar (or regular vinegar)
8 oz. warm water (about 2 cups)
Mix and knead.
Add more flour or water until the desired dough consistency is reached.
Knead for an additional 10-15 mninutes. Let the dough rest for 1 hour. Then punch and remove all bubbles. Roll into a tight rectangle and place in an oiled then floured bread pan. Let it rise until the dough is above the pan by 1 or 2 inches.
Bake at 375 F for 15 minutes. Decrease the temperature to 350 F and bake for 20 minutes.
Or bake for 15 minutes at 350 then loosely cover with aluminum foil and bake for another 20-25 minutes.
You’ll know the bread is done when you tap the bottom of the pan and it gives off the sound of an empty container otherwise cook a bit more.
Let the bread cool and bon appétit.

Orange Lemon Sorbet
My mind is frantic. I got news that I might go back to Oak Rige for experiments. I have other plans. Why oh why?! I am excited but I am worried. When will I leave this town?
To get my mind off, I got in touch with a good friend and exchanged a few recipes. Here's what I am trying tonight.
Orange Lemon Sorbet.
2 squeezed organic oranges
1 squeezed lemon and the zest.
3/4 cup sugar
1 cup water
1 teaspoon agar agar
1/4 cup Southern Comfort, SoCo, or vodka
Mix the water and sugar and bring to a boil. Add the lemon and orange juices and heat until boiling. Turn the heat off and add the zest, SoCo, and agar agar. Strain and let cool to room temperature then add to a bowl and cool in the freezer while whisking with a fork every 30 minutes until frozen .
Let's see what will happen... I will update once I test and taste.

Update 1
After waiting and waiting, turns out that the first ice starts forming after an hour and some. So, did some search on the net and found a site that mentions to whisk the mix after an hour and a half then every hour over four hours to create the fluffy and smooth sorbet texture... (that's if you don't have an ice cream maker...) now i'm too sleepy to stay up and do this... *sigh*
More to come.
Update 2
so waited for 3.5 hours and stirred the mix 4 times. will leave it overnight or whatever is left of the night and check on it in the morning maybe mix/whisk one more time and place back in the freezer. tasted good a bit sour a bit tangy a bit sweet and a bit creamy/oily. let's see how it's going to be when it's frozen.
